Impossible Pie: A Way Of Life And Death

Impossible Pie recipe
When my mother died she had an old case filled with all sorts of paper bits and pieces she had collected over many years.

One of the slips of paper was the one shown above - a recipe for Impossible Pie. I'd never heard or seen such a pie previously, but perhaps it is known in other countries.

One of the things mum often said from when I was a child was that, "It's only impossible when you are dead." This was when I was moaning about having to do something or other that looked difficult.

Another saying was words to the effect that everything would work out okay and would fall into place at the right time. Of course, as a child this never seemed realistic.

But mothers know best. Okay, some of the time, but like the Impossible Pie things do fall into place in life - if we follow the recipe. It's also true that nothing is impossible.

Just in case you can't read the recipe, here it is again:

Impossible Pie

Needed
4 eggs
1/4 cup margarine
1 cup white sugar
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup coconut
1 teaspoon vanilla

Place all ingredients in blender at one time and blend until mixed together. Pour into a buttered 10" pie dish. Bake in a 350 degree oven for 1 hour. When done, crust will be on bottom, custard in the middle, and coconut on top - right where they belong!

  3. I used to make something like this using a recipe with/from Bisquick....how cool to have a "scratch" recipe for it!

  5. My grandmother used to make this pie! She used the Bisquick version of it, and yes, it works :-)

    I love her quote, "it's only impossible when you're dead" and am adding it my repertoire:). My son will be tired of hearing this in no time!!

  7. I love the little boost of encouragement heard in this post. I too know the Bisquick "Impossible Pie" and still make it from an old recipe cut from a box of the product. (it was for a hamburger pie!)

    It absolutely works. I've made it often. I think it's better at room temp. Cold is ok, but seems to become denser when cold. Top with cool whip.

    When I read the way the pie shakes out after baking it reminded me of a familiar Betty Crocker pie made years ago with Bisquick. It was called Impossibly Easy Coconut Pie. You can still find it online. Almost identical ingredients, except Biswqick is the dry ingredients combined. No Biswqick? Then follow the posted ingredients. It definitely works.

    My gosh! I made this wonderful pie. Because my husband is a diabetic I had to use stevi,cashew milk. This pie is wonderful. Crust on the bottom,custard in the middle and coconut on top. Excellent! Thank you for sharing this wonderful recipe.
